Thailand Sesame Noodle Salad

Servings 4

  • 8 ounces whole wheat spaghetti, uncooked
  • 1/4 cup soy sauce
  • 3 Tablespoons smooth peanut butter
  • 2 tablespoons cider or rice wine vinegar
  • 2 teaspoons dark sesame oil (adjust to taste)
  • 1 to 2 Tablespoons hot sauce (adjust to taste)
  • 2 cups shredded cabbage (can use prepared coleslaw mix)
  • 1 cup bean sprouts
  • 1 red bell pepper, julienned
  • 3 green onions, finely chopped
  • 1 Tablespoon sesame seeds

Cook pasta to al dente, then rinse in cold water in colander. Drain the pasta very well.
In the bottom of a large bowl, whisk together the soy sauce, peanut butter, vinegar, sesame oil, and hot sauce. Add noodles and the cabbage, bean sprouts, and red pepper; toss to coat the noodles evenly with sauce. Sprinkle with green onions and
sesame seeds. For a heartier salad add grilled tuna or salmon. Chill.
