Mexican Tostado Salad
Servings—4
- 4 whole wheat flour tortillas
- 2 cups fat free refried beans
- 1/2 cup chopped red tomatoes
- 4 oz. shredded reduced fat cheddar cheese
- 2 Tablespoons sliced olives
- 4 Tablespoons reduced fat sour cream
Place tortillas on a baking sheet and place in 400 degree oven for 3 to 5 minutes or until slightly browned. Mix taco sauce and refried beans together until smooth. Place in microwave safe bowl and microwave until hot. Spoon bean mixture evenly onto each tortilla. Layer lettuce, tomato, cheese and olives on top of beans. Place 1 Tablespoon of sour cream on each tostado. Serve immediately.
